Sloppy Sophisto Joes

2 tbsp| unsalted butter

1 large| yellow onion - finely diced

4 cloves| garlic

1 medium| carrot - finely diced

1 | celery rib - finely diced

1 tsp| kosher salt + more to taste

1 ¹/₂ lbs| ground beef

1 tbsp| chili powder

1 tsp| ground cumin

¹/₂ tsp| smoked paprika

³/₄ tsp| ground black pepper + more to taste

2 tbsp| tomato paste

1 (14 oz can)| crushed tomatoes

¹/₂ cup| dry red wine

2 tbsp| Worcestershire sauce

1 ¹/₂ tbsp| brown sugar

2 tsp| red wine vinegar

melt then saute until onion begins to brown

cook, stirring occasionally until vegetables are softened

brown beef in skillet

combine

1 minute add and cook

6-8 minutes boil, stir occasionally, until sauce thickened

stir in and season with additional salt and pepper to taste

2 min cook and stir

| bread and butter pickles

slather mayonnaise on bun
